Parse config.yaml into typed AppConfig dataclass

- ServerConfig, VideoConfig, ModelConfig, DeadBugConfig,
  AudioConfig, LoggingConfig as nested dataclasses
- Consumers use config.server.host, config.model.resolved_path etc.
- env var overrides preserved via _apply_env_overrides()
